Smoked Country Rib Roast

It’ best to pull your country rib roast (or C-Rib as we call it) from the fridge 1-2 hours before you heat it. Don’t worry if you forgot, it will still turn out great! This roast is fully cooked and can be eaten cold from the fridge like ham.

Preheat the oven to 350ºF. Put the roast in a baking dish wish a 1/2 cup of water, white wine or beer of your choosing. Cover with foil and bake for 1 hour or until 135ºF internal temperature is reached. Remove foil and rest for 10 minutes, then slice and eat.

Remove the ribs and then slice across or leave the ribs and cut thick ham-steak style chops.
