St. Paddy’s Day Feast

A classic Irish-American meal, corned beef and cabbage is a favorite of ours. Brined with salt and spices for more than a week corned beef develops it's unique flavor and texture over time.    

Originally used as a substitute for bacon (gasp!) corned beef is not a traditional Irish dish.  It was developed in the States by Irish immigrants harkening to their homeland where preparing beef was sign of wealth and good fortune, getting the name "corned" from the small seed shaped salt used to cure the beef.
